Engine number missing on race bike

I bought an ex BSB bike in good faith, checked the frame number and engine number, all looked fine. A few days later after taking the fairings off I noticed where the actual engine number was suppose to be has actually been ground off, the number I was shown on the crankcase must be some Yamaha works number or something.
The seller traced the previous owners & found that the engine was stolen/recovered & is legit, he refused to refund on the grounds that there is nothing to be worried about & I have his word & an official receipt from his bussiness.
I am going to start trackdays on it soon, what does this receipt mean to me should I be questioned by the police.
I often see adverts on e-bay mentioning the numbers have been removed (CAt B) but they will give you an official receipt, does that mean I can keep the bike if no evidence is found of its past?
The frame number is fine & has been verified by Yamaha, it's only when I quoted the engine number that they said it doesn't match.
